hold the scallop in your left hand if you're right-handed or right if you're left-handed with a flat shell uppermost and the hinge away from you insert a blunt knife between the shells toward the hinge where there is a gap and twist if there is strong resistance and the shells will not separate use an oyster knife with a handle this will provide greater purchase once the shells come apart hold them open with your thumb and return to the blunt knife run this along the inside of the curved shell to separate it from the shell contents once the two shells will separate completely hold the flat shell vertically and run the knife along the inside of the flat shell to release it from the contents next locate the adductor muscle and use your fingers to remove the gut frill mantle and row from around it you can keep the row if you wish but here we'll show you how to remove everything if you wish
